The Breakfast of the Non-Champion
For the past two months or so I have managed to perfect what I consider to be the ultimate breakfast. The delicious combination of carbohydrates, protein, and fat is very easy to make and takes only 15 minutes to prepare and cook. I have had many great mornings as a result of eating this dish and I wanted to share this recipe in hopes that you might get the same joy that I have experienced.
So, here we go!
The first and arguably the most important step is to make sure you have a pre-greased skillet. You can use olive oil if you like, but, since I am going green, I prefer to use the bacon grease left over from my roommate’s breakfast. Once you have a pre-greased pan the first step is to add exactly 9 frozen Tater Tots. (The number is vital in keeping the carbohydrate/protein/fat ratio.) Keep the heat on medium and let the Tater Tots defrost and cook for about 5 minutes. (It’s okay if they are not fully cooked at this point.)
While the Tots are cooking take 1/2 of a Farmer John Hot Louisiana Brand Smoked Sausage and cut it up into small wedges as shown. Once they are cut up, add the sausage to the pan with the Tots. Let the sausage cook for 3ish minutes. Stir occasionally. While the sausage is cooking, mix up 3 large AA eggs and add 2 tbsps of non-fat milk and add salt.
When the sausage is browned, pour the eggs into the pan. Stir continuously. The eggs cook fast! By now, the Tater Tots will crumble apart giving the mix a nice texture. Cook until the eggs are done.
The final step is to add one serving of Crumbled Feta Cheese.
Below is a sequence of pictures to illustrate how to make this wonderful dish. The pictures go left to right, top to bottom.

Here is the nutritional analysis:
Calories: 625
Total Carbohydrates: 25g | 28.7%
Protein: 18.4g | 21.1%
Fat: 43.6g | 50.2%
Summarizing from a nutritional standpoint, this breakfast is not overly good for you… but it sure is good! With over 50% of the meal being fat, this is not something that is ideal for a daily breakfast unless you utilize a high fat diet to accomodate your specific type of training. So as a wise man once told me, “All things in moderation, including this breakfast.”
